Beecher's Handmade Cheese opened its original Pike Place Market location in 2003 with a glass-walled cheesemaking kitchen designed to put the process in public view. Visitors can watch cheesemakers at work when production is underway, then shop Beecher's own cheeses at the counter or order café food such as grilled cheese, soup and its branded “World's Best” Mac & Cheese. The counter also carries cheeses from other American artisan producers, so not every cheese sold here is made in the Pike Place kitchen. Production and the day's menu vary, and no particular batch or stage is guaranteed.
